PUMPKIN SQUARES
Mix: 1 1/3 cup crushed graham crackers crumbs
1/3 cup sugar
½ cup melted butter
Press into oblong cake pan. Line entire bottom of pan
Beat: 2 eggs
¾ cup sugar
8 oz. cream cheese
Pour over graham crumb crust and bake at 350 degrees for 20 min.
Cook: 2 cups pumpkin
3 egg yokes
½ cup sugar
½ cup milk
1/2 salt
2 teas. cinnamon
Cook until thick, about 5 min.
Sprinkle 1 envelope plain gelatin into ¼ cup water. When dissolved, add to pumpkin mixture, cool until it mounds.
Beat 3 egg whites until stiff. Add ¼ sugar. Fold into pumpkin mixture. Pour over cooled crust. Keep in refrigerator
Top with cool whip before serving. Optional: sprinkle with chopped pecans.
